Making your own chocolates!

Wow, its been a while since I've done anything with this blog! You've probably thought I have forgotten all about it! Not really, I've been pregnant. Yep, that's my excuse. I only have around 3 weeks or so left and I'm really hoping to get back into blogging as I have kind of missed it. But enough about me, on to the chocolate!

I had a diaper party this past weekend and decided to make my own cupcakes for it. I felt it would be cheaper and I could get exactly what I wanted. The theme of the party was pink and chocolate with butterflies. That's where the chocolate making comes in... I decided to make chocolate butterflies. This process was actually much easier than I anticipated it would be.

Here are the supplies you will need. Of course you'll need some things for a double boiler which I'll explain in a minute.

The bag of chocolate you see there are the milk chocolate discs. (Make sure what you get is milk chocolate, as regular baking chocolate is bitter) I was able to find these at a party store fairly cheap. You also see a candy thermometer and a mold. (The paper was just so you could see the mold against my table)

Next you'll need to put together a double boiler. What my husband did for this (he helped me with this) was to get a pot filled about halfway with water and a metal bowl that was slightly larger than the pot. The bowl has to sit down into the pot a little without actually touching the water. Put a bunch of the chocolate discs into the bowl right away and when they start to melt start stirring it constantly. Chocolate burns very easily so it needs stirred constantly. This is what it should essentially look like:

Once the chocolate is melted you'll want to start to "temper" it. This is when you allow the chocolate to reach a certain temperature and then slowly cool it down before using it. In this case with milk chocolate we heated it quickly to 112 degrees F and then slowly cooled it down to around 88 degrees F. Again stirring it constantly. This is where your candy thermometer comes into play. Make sure when you go buy one, that it falls below 100 degrees F, some don't.

Once you have tempered the chocolate, which takes about 20-30 minutes, then you can pour it into your molds. I used a spoon to put the chocolate into the molds because my molds weren't that deep. Ok so the picture shows a spatula, but that was when my husband was putting it into the mold and I was taking the picture! When I did it after the picture was taken, I used a spoon! LOL

After you have the mold filled, lightly tap it on the table to remove any air bubbles and to even out the chocolate. Then place it in the freezer until the chocolate gets hard again. I think we left ours in for about 20 minutes. Once you pull the mold out of the freezer just turn it over and lightly tap on it until the chocolate falls out. (There is no need to grease the mold, the chocolate won't stick, I promise!) Just continue to repeat this process until you have filled all molds or if you are like me got enough butterflies made with only using the one mold.

This was probably the easiest thing ever to do! I was always so daunted by the thought of making my own candy but this was so easy! My kids were even able to help out and they loved it! And here's the finished cupcakes with the chocolate butterflies!

Baking Soda and Vinegar to the rescue again!

If you have been following me for a while you know my love for vinegar and baking soda to clean all kinds of different things from the oven to crayon on the wall. Never did I think that I would actually use it on my children!

I woke up this morning to my youngest son and green hands. He apparently had found a green marker before I got up (I didn't realize he was awake in his room) and decided he wanted to be green for the day.

He wasn't real happy about getting his picture taken!

So after breakfast and after I was able to get some coffee, I thought about what or how I was going to get this green marker off of his skin without using something corrosive. I thought about rubbing alcohol but I knew that wouldn't get it off completely. Then I thought of peroxide but I didn't want to bleach his skin. So then I thought about baking soda and vinegar. I grabbed a bowl and put some baking soda and vinegar in it to make a thin paste. Then I told my son to stick his hand in it to soak. I scrubbed his skin with a soft sponge until most of it was gone. Then I had him wash his hands with soap and water.

This was the result! Almost perfectly clean (except a few little spots on his fingertips), but way better than the before picture! So there you have, baking soda and vinegar rescued us again!!

Making my house a home

As every good mom knows sometimes its hard to make a house feel like a home when you are on a tight budget and sometimes its hard to even decorate your home when on a tight budget. That's the beauty of being mom- we are hardwired to be creative.

As the school year begins and we all get back into our routines whether you homeschool or you utilize the public school system- there is always a routine to be had. Its like our own "Happy New Year". There is something about the school year that allows us to feel like its a good time to change something that isn't working in our life. The kids all go back to school, the leaves begin to change and the weather begins to cool down. So how do you freshen up your home?

I sat for a while and had this very question. Its almost too early to bring out all of the Autumn decorations, yet the house looks boring and bare. I generally have different types of decorations out from October through April, so that means from May through September my house is just my house. It almost feels stark and like someplace to just rest our head. As I pondered the question of how to liven my home up and give us something else to look at besides the same 4 walls I discovered that September is a perfect month to redecorate! But what theme could I go with? Apples? Pencils? Rulers? Then it dawned on me, decorate for back to school!

Some of the most prominent things for back to school make some of the cutest decorations! So on the search I went. I found a cute sign, a cute little painted chalkboard and a recycled painted glass jar. Now generally I don't pay very much for my little decorations but in all fairness this was all out of birthday money that I had received, so there was nothing out of the budget for me to do this.

How cute is this!?

I absolutely love the primitive sign with the apples on it and it's definitely a reminder for us to remember how blessed we are. Some of the easiest things to decorate for back to school is pencils, apples, and rulers.

This jar originally had a candle holder in but I decided to take it out and put a bunch of un-sharpened pencils into it for a more nostalgic look.

Then I found this cute little hand painted chalk board that added that little bit of extra touch. I only paid $1.50 for it!

So as we prepare for another week of school after a long weekend, we will be joyfully looking at the new decorations in the house. It's that extra little bit that makes the home feel warm and festive. I have a few other ideas but I have to find the things at the right price. Next in my sights for my living room is a set of 3 books with the old leather strap, an old ruler, and an antique set of glasses.

Banana Bread without Eggs

Yes you read that right! This banana bread recipe is fabulous with or without eggs. I came across an egg substitute while in my journey's of the internet and I thought maybe I would try it. It makes for a great alternative for a vegan or someone who is just trying to live a little healthier!

Here's what you'll need:

2 cups of all-purpose flour

1 teaspoon baking soda

1/4 teaspoon salt (which I have omitted before, it doesn't change the taste at all)

1/2 cup of butter (equivalent to one stick, I also used margarine with no change to taste and don't throw away the paper the stick came in! Tip on how to use it below.)

3/4 cup brown sugar (I used dark as that's what I had, but you can use light too)

2 eggs (IF you were using eggs! More on that in a minute)

about 4-5 over ripen bananas

3 bowls

a bread pan

a tablespoon

a spatula

ground flax seed

This recipe does technically call for eggs but I didn't have any and I HAD to use the bananas I had or they were going in the garbage. So this is what I did, to substitute one egg use 1 tablespoon of crushed or ground flax seed whisked into 3 tablespoons of water. I of course doubled this since the original recipe called for 2 eggs. Make this mixture in a small bowl and place it aside.

Using the flax seed will give the bread a nuttier taste but it is of course banana bread so no big deal. You can also use this substitution just about anywhere that calls for eggs including waffles, muffins, and pancakes. Like I said though, be aware, it will give whatever you put it in a nuttier taste so it may not be suitable for all recipes, but for this one it is. :-)

Anyway, on to the recipe. Preheat the oven to 350 degrees F.

Peel the bananas and mush them up. They should look something like this when you are done.

Then, in a separate large bowl combine flour, baking soda, and salt. In the third and final bowl, cream the brown sugar and butter together. Hopefully your butter wasn't frozen! The mixture will look something like this:

Grab the bowl with the mashed bananas in it and mix your flax seed mixture into the bananas until well mixed. It will look something like this:

Then you will stir the banana mixture into the flour mixture; stirring just to moisten, looking like below. You may have some clumps of flour and that's okay!

Now generally you are suppose to have a bread pan already greased and waiting. But, I wanted to show you this little trick too. Take the paper to the stick of butter you just used, and use it to grease the pan. There is enough butter residue left on the paper to grease the pan enough to be non-stick. Talk about using all your resources!

The picture on the right is what the batter will look like once you place it in the pan. This bread will not raise that much if you mix it too much. And of course I wasn't paying attention and I mixed it too much, so my loaf was much flatter than if I had just mixed it until moistened. You will have flour clumps and that's okay!

So anyway, this is what your loaf should look like when all is said and done. Baking it for 60-65 minutes or until a toothpick inserted in the middle comes out clean. Once its done, let it cool in the pan for about 10 minutes before removing and then spread some butter on the crust to soften it. And voila, you've made banana bread without eggs!!

Making Strawberry Jam

So about a week ago my husband and I decided we would find a U-pick strawberry farm so we could make some jam. Little did we know what we were really in for!

Picking the strawberries wasn't the hard part and was actually kind of fun. We picked a total of 13 pounds and had a great time. This was the first time we took the boys to pick anything that wasn't from our garden so they had fun too. We also learned that the strawberries were organic! This wasn't advertised anywhere when we got there but I did ask just because I wanted to know what I needed to do to the strawberries before making the jam. I was one happy mamma when I learned they were organic!

So here's what you will need to make jam and I made a double batch so you would need to double this recipe if making a double batch like we did- 2 quarts of strawberries (or 3 pounds) and 6 cups of sugar. I didn't use pectin purposely because I didn't want the preservatives in my jam. My grandmother never used pectin that I know of so I figured it was quite possible for me not to. If you are looking for a recipe with less sugar than pectin is definitely needed.

When you get the strawberries home, wash them, and cut the tops off along with any bad spots. I would recommend wearing gloves during this part or you will end up with very red fingers. Strawberry stains, ya know! Then you have to mash them down. Do not use a food processor for this as you don't want a puree. We used our potato masher. The mixture should look something like this when you are done.

Then add your sugar. You want to bring the mixture slowly to a boil and then heat it quickly to gelling point. The best thing I can tell you if you are using a thermometer is to heat it 8 degrees passed the point of water boiling. If you aren't using a thermometer and only using your best guess, it should be the consistency of thin cream of wheat. I didn't get a picture because it was hard to show the consistency. This was also the part we couldn't figure out. We were trying to follow the Blue Ball cookbook for gelling and it just wasn't working out that way. We ended up cooking the jam for I know a better of 2 hours or more, which isn't really needed. Finally we gave up and just placed it into jars hoping it would gel up as it sat and cooled. Thankfully it did! What no one tells you is that jams and jellies will be 'thin' before it cools. As it cools, it gels into what you and I think of as jam or jelly. The mixture reminded us more of a thick soup. Make sure you also use a very large pot if making as much as we did! We had ours over flow the pot we were trying to cook it in once it started to boil and had a big sugary, sticky mess on our stove!

Once you put it into the jars, you can skim off the pink foamy stuff if you want but you don't have to and then place the lid on. Process the jars for about 15-20 minutes. We got a total of 16- 8 ounce jars.

Then you should have some wonderful jam for peanut butter and jelly (or jam) sandwiches that everyone can enjoy! My son did!

Bulk or Once a month cooking experiment!

I have to say its been a while since I have posted something to this blog but I have decided to take this blog back to what I originally had thought about for this blog. The original idea and that was NOT for posting deals and coupons. There are so many blogs out there for that and I originally wanted to stand out a bit. So for in the future, there will probably be very few coupon deals posted if any at all. Christmas will probably be the only exception to that rule. So anyway, aside from all that I wanted to announce my latest experiment, once a month cooking.

My grandmother and great grandmother were always in the kitchen, as well as my mother slaving away at the stove in the heat of the summer and I could never figure out why. Well of course we had to eat but wasn't there truly a better way then slaving all day in the kitchen? So in my daily journeys of stay at home mommyhood I discovered what some call bulk cooking and what some call once a month cooking. I approached my husband about it months ago and could never get up the nerve to actually do it! It seemed so daunting to cook all that food in one day! Then I came to the realization that I could potentially cut my food bill for the month significantly down by doing this. So I set forth to conquer.

I started looking online for recipes because lets face it I'm trying to save money not spend more so I didn't want to buy a book, although it would make a great birthday present! *hint, hint* LOL! There are many sites out there that offer freezer cooking recipes so I just found a few that sounded good and would be super easy to make and I printed them.

Then it was off to look in my cupboards to see exactly what I had and didn't have. I usually keep a pretty good stock pile of ingredients so I wasn't too worried. I opened my cupboards and I felt like Old Miss Hubbard- my cupboards were almost bare! Then I realized that was because I had no snacks in the house and needed to go shopping anyway. The main bulk of the price for this experiment went to meat. I wanted to deal with fresh meat because technically by food safety standards meat should not be frozen, thawed and frozen again. I know we have all done this but it was just easier to deal with fresh meat. So I had my husband call the local butcher not far from us and we ended up getting 15 lbs of meat for around $49. That bundle included boneless skinless chicken breast, boneless pork chops, boneless spare ribs, hamburger, and swiss steaks- 3 lbs of each.

Then I went to Walmart and got everything I was missing, which wasn't much. Really I just needed to get all the different types of cheeses and some other fresh ingredients I was missing. No big deal. The trip roughly cost me about $25.

I split the whole ordeal into to two days- day one for shopping and planning and day 2 for cooking. This plan seemed to work out really well. I do know I need to plan a little better at how the day will run. What we will cook first, second and so on and really pay attention to the details of prep work. We totally missed that this time! The other thing I think we will do differently next time is splitting up the recipes between my husband and I so that we know what each other is working on and not constantly asking, "what are you doing?" or "what are you making right now". Oh and I would highly recommend having someone there to help you with all of this if this is something you decide to embark on. My husband luckily was a short order cook for several years so this was easy peasy to him!

Once we had everything figured out and the recipes each of us was doing we were really underway. The total cooking time took about 4-4 1/2 hours. That does not include the cooling time that needs to be added in order to put some of this stuff away! Again, totally missed that part of it. No big deal though. We didn't let it ruin our plans for the evening. We covered everything and left, by time we got home everything was cool enough to package and then freeze.

The other thing I didn't take into account is the amount of containers needed to freeze things. Not everything goes well in a ziploc bag. So I used a lot of my containers, which I don't mind, I just didn't plan for it. I will say though everything we thought would work with some of the pans and such did, and made things that much easier! For example, for the lasagna, we put plastic wrap down first in my glass baking dish and put all the ingredients for the lasagna inside. We placed that in the freezer for about 4-5 hours and then removed it from the freezer. The plastic wrap allowed me to remove the now frozen lasagna from the baking dish and place it into a ziploc bag! Now when I want to make the lasagna its already in the shape of the pan needed so I just remove it from the ziploc, drop it in the baking dish and place it in the oven! The other thing we did was with our meatloaf. We sprayed our bread pans with cooking spray and then placed our meatloaf's inside the pan. Placed the pan in the freezer for a few hours and then removed it. The meatloaf fell right out of the bread pan and I was then able to put it into a ziploc bag and back into the freezer. Again when we are ready to use it, we can take it out of the freezer and drop it right back into the bread pan and bake it.

Now for the real experiment! Will we use all the meals? How much money will it save us compared to not bulk cooking? Will we eat out less and eat in more? Stay tuned for further blog posts letting you know how the rest of the month goes with this! We are only $75 in right now which made us 20 meals. Break that down and its about $3.75 per entree that feeds 4 people. We will see how the rest of the month goes!

takes the sugar from blood to the cells. When glucose accumulates inside
blood rather then going into cells, it can result in diabetes complications.

You might have the power to increase and protect your present health. With proper

nutrition and training and by making good lifestyle choices (like not smoking),

you are able to feel better, stronger, and healthier, and will lower your risk of

diseases including cancer, diabetes, heart problems and heart stroke.
What is a Healthy Weight?
There's a great way to see in case your current weight puts you at risk for

developing serious diseases. Visit www.diabetes.org/bmi and consider the Body Mass

Index (BMI) test. The results will let you decide if you need to stress about

your weight.
The Better You consume, The Better You are

Here are a few basic guidelines that can help you and your family make healthier

food decisions.

 * Eat numerous vegetables and fruits.

 * Choose wholemeal foods over processed grain products.

 Try brown rice as an alternative to white. Substitute whole wheat grains bread

for white.

 * Eat fish 2-3 times weekly.

 * Select leaner cuts of meat like those that end in "loin."

 * Remove the skin from poultry and turkey.

 * Eat non-fat dairy

 * Drink water and low calories non-carbonated drinks.

 * Use liquid oils for cooking as a substitute for solid fats.

 * Reduce high calorie snacks like chips, cookies, cakes, and regular frozen

goodies.

* Search for baked chips and reduced calorie snacks. Or have a bit of fruit

instead.

 * Watch your serving sizes. Even a lot "healthy" food might cause excess weight.


Tips:
 * Compare labels of similar foods, then opt for the one with smaller amounts of

saturated fat, cholesterol and sodium.

 * Adults should consume less than 2400 mg. of sodium per day. If you have

hypertension, it's best to target even less.

 * Try adding spices and herbs in your own cooking to replace salt for enhancing

flavor.

Just a little Physical activity Goes far away

Something that gets you up and moving is designed for you. Here's what it can do:
 * Decrease your risk of developing diabetes type 2

 * Lower your risk of cardiovascular disease and stroke Lower hypertension and

cholesterol

 * Reduce blood glucose (sugar) levels in case you have diabetes, which often can

lower your risk of developing diabetes-related complications

 * Reduce tension

* Help you to lose weight

 * Offer you more energy

 * Make it easier to sleep better

 * Build stronger bones and muscles

You don't need to go to a gym, play sports or use fancy equipment.

Naturally, you should speak to your physician prior to starting any exercise

regimen if you have Diabetes. 

Maintaining a healthy diet and staying active are far more important when you've

got diabetes.  Well-balanced meals might help keep your glucose (sugar) level as

near to normal as it can be.  Being active likewise helps you decrease your blood

glucose. If you increase your physical activity levels, you might be able to
take less insulin or diabetes pills. If you are very inactive, have heart disease

or simply a history of foot ulcers, talk to your doctor about safe exercise in your

case.  Check your blood glucose before exercising. If it's under 100 mg/dl, eat

some fruit, crackers or have a glass of milk or juice. Check it again after

exercising to learn how your blood glucose responds to physical exercise.

Bring a snack if you will be active for some hour.

Mom's Secrets to Keeping Bugs Out!

So in continuation of my series of Mom's Secrets, I decided to do one on bugs in the house. I just recently found 2 ants in my home and I hate bugs in my house. So I decided to share some of my secrets and tips with all of you! The first two natural remedies, you should have all the ingredients already!

To keep ants from coming into your home use table salt. Ants absolutely will not cross a line of salt. So any area where ants are usually finding their way in, put a line of salt and they will no longer come in. If you ever come to my house you will notice a line of salt at my doorway! It helps to protect from other low to the ground bugs from coming in as well. If its an anthill that's a problem, pour boiling water directly on the anthill. They will gone for sure after that!!

Want an all natural bug spray?? Here's the best recipe I've come across!

6 cloves of garlic, finely chopped

1 small onion, finely chopped

1 tablespoon of cayenne pepper

1 tablespoon of liquid dish soap

Mix everything together in a quart of warm water and let sit at least over night. Strain it in the morning and pour into a spray bottle. Works every time!

In early Spring or Summer you will want to look over your house. Fix any and all cracks and holes and replace any siding as this is one of the MAIN culprits to bugs getting into your home. Also, if you have a honey bee problem, please call a bee keeper. Since the decline of honey bees a lot of bee keepers will come get them and take them away for free. If you are having a wasp problem the best thing I know to use is wasp spray. This is something I have not fussed with using something natural because my husband is highly allergic. To help prevent them in the first place, do not have hummingbird feeders out and do not leave animal food out in the open. Wasps love protein and dog food that is left outside is prime for them! Also, make sure to seal your garbage cans! Don't just leave your trash sitting out in the open, that's a wonderful way to harbor bees of any kind!

As far as a natural bug repellent, its tough to say. Most homemade repellents require a lot of essential oils and who really has the money for those! At least not in this economy! I will say though that I've never been bitten by a mosquito while around smoke! But, if smoke isn't your thing I would just use either Off or Avon's Skin So Soft line of products.

If you have a problem with lady bugs, there isn't a whole lot you can do except close up your home. Ladybugs are attracted to light colored homes because it most reminds them of their natural habitat. So all I can say about them is to just make sure you have your home closed up tight! And don't forget to look in your attic for any potential holes in your attic that bugs could get into!

And if all else fails, I have used Windex to kill bugs!

A couple of roll backs at Walmart!

Okay, so I've been totally out of my realm this week and last week. I just can't seem to get it together enough to get the deals out there and I'm sorry!!! I promise I will do better next week. On a high note though here's a couple of things I noticed are still on roll back at Walmart!

24 packs of Pepsi and Coke are still $5!! What's crazy is you can see the deal right in front of you because their 12 packs are $4.28!

Rubbermaid 24 pack Easy Find lid containers is on roll back for $10! This was the perfect time for me to get a new set! I got the teal green colored lids and I absolutely love that the lids click together making it easy to find a lid!

Remember prices vary widely from store to store so I would call before making a special trip out for these! I know I will probably stock up on more soda when I go back!

My boys gave me flowers to replant on my balcony and homemade cards. The homemade stuff truly is so much better than anything ever bought from a store! At least the homemade stuff I KNOW came from their little hearts instead of Daddy running to a store. I had a wonderful day with my boys and I even got a little me time when I went to see Curtis Stone in person at a cooking show with my mom and sister. It was wonderful!

Mom's Secret to Finances

So as per request I will discuss decluttering your finances and how I keep track of it all.

I'll be honest up until a few months ago I had complete control of the finances. I don't anymore. Do I still keep track and come up with game plans and goals? Yes, of course. But the actual bill paying I don't do anymore. I gave it up to my husband to relieve some stress on me.

And I'll be super honest here, I didn't think my husband could do it. A few years into our marriage, I was very ill with my second pregnancy so my husband had to do the finances. It took me over 2 years to recover from what he did. Well after becoming a stay at home mom and having that many more responsibilities, I had to give something up or I was going to go crazy. My choice was to give up the bill paying. Why? Because I wasn't making the money anymore, how did I have a say in how it was spent or how the bills got paid? I don't. Plus, if my husband was paying the bills then he had a better understanding and obligation to work more hours if he felt he needed to, not by me saying "hey hon, work some extra hours this time". He brings in what he brings in and its now my job to be a good steward of that money. To make better budgets, spend less and save more. To make his paycheck last longer and go farther. He takes responsibility for all the utility bills and its my job to take care of the rest.

So how do I take care of the rest? Well here's some tips.

1) Be real with yourself. Be real with how much you actually bring in and how much you actually put out per month. You can't truly have a great budget that will work for you not against you if you don't get real with yourself and your money. Take your pay stubs and look at what you bring in on a monthly basis. If your take home pay varies from pay check to pay check, take the lowest amount you brought in and use that. If you work more than one job than separate the pay checks and use the lowest amount of each and then add them together. This is your budget starting point. Now set that aside and take a serious look at your bank statements. How much did you actually have going out that month and compare that with your lowest take home pay. Did you play more than your pay? Chances are you did if you aren't real with yourself and your money.

2) Prioritize. Do you need that credit card? Did you need to eat out $200 worth last month? Do you need that many minutes on your cell phone? Do you actually need your cell phone? Here's the shocker, learn what is a need and a want. Everything I just mentioned above, although nice to have and do are not needs, they are wants. Although very nice wants, they are wants. What I mean by prioritize is realize that electric, water, sewage, rent/mortgage, food are all needs. That's the first and foremost that you should be paying. After you prioritize those in a category then comes your wants. Prioritize your wants. For example, one of my luxury wants per month is a cell phone for my husband and I. He is in EMS so our cell phones are the only way to communicate with each other during the day. So that is on the top priority of my wants list for per month bills. Other top priorities on my wants list is my van payment. I wanted a van, I didn't need a van so that goes under the wants category. Do you understand what I'm getting at? There are certain things you have to have to live and other things that are just nice to haves. Once you prioritize those correctly, you'll better be able to live within your means.

3) Make a budget. Period. Once you know the lowest that you've had to live off of and you've prioritized your bills you'll be able to make a better budget for you and your family. To make this budget, take all of your bills. Take your phone bills, electric bills, heating bills, mortgage/rent, water, sewage, whatever bill you have and place on a form like this one. And be honest with yourself when filling this out. Don't put in electricity $50 when you know consistently your electric bill is $100. Making a budget can be hard, but at this point in the game you are only filling in numbers so you can see exactly what you are doing.

4) After making the budget and honestly seeing if you are living within your means, look for ways to cut your bills. Remember in tip 2 when I said to prioritize? Now is the time to look at that and see what you can cut, permanently. If you only owe $100 on a credit card, pay it off and cut it up. If you look at your cell phone bill and you're only using half of your minutes, call them and lower your minute package. Call your cable company and see what they have going on for their loyal customers or see what you are being charged every month and for what. If you are being charged for something you don't use, cut it. If you have 300 channels but only really watch the top 100, cut your package. Are you eating out $200 or $300 a month? Cut it. Promise yourself to only eat out once or twice a month. If you smoke, quit. ;-) Cutting those bills alone can save you hundreds of dollars a month which could put you under your means. Have a car payment that's $500? Trade it and get a used car with a payment of $250. There is no keeping up with the Jones' when you are living out of your means. Keeping up with the Jones' is what got people into the mess they are in. Why do you NEED a new car? You don't. Why do you NEED 1200 minutes on your cell phone plan? You don't. Why do you NEED 600 channels on your cable? You don't. Bragging rights isn't fun anymore when you are up to your eyeballs in debt. So look and honestly see what you are using and not using and cut your bills. I cut our bills total from over $2000 a month to under $1300 a month just by doing the above actions. $10 is $10 when you are saving money! No more excuses! I don't want to hear that you get a better rate with a new car compared to a used one, I don't care if you talk yourself into thinking you need 600 cable channels. Let's face it, you aren't going to die just because you drive a used car and only have 100 channels on your cable.

5) Meal Plan. Plain and simple, meal plan. Use a form like this one to help plan your meals every single week. This will force you to look and see what you already have and attempt to cook meals from that. Then whatever days you need to fill in, you can fill in and then go shopping for just that. I plan a meal every week which I post every Monday. You can find all my meal plans up until now here. I cut my monthly food bill from $500 a month down to $300 a month by meal planning. I also use coupons but that's another blog post! :-)

6) Shop with a list! This is vital in cutting your food budget! After making your meal plan make a list! Match that list with the local sales going on at your store. You can save hundreds of dollars a month by shopping with a list and taking advantage of sales going on. You don't even need coupons to take advantage of something that is on sale! When you make that list, put the cash in your pocket and go to the store. Buy nothing else except what's on your list. Doing this will not only cut your food bill but it will also cut your gas bill and give you extra time because there will no longer be any last minute running to the store for just one thing and come out with 5 bags. Less trips to the store means more gas in your tank which means more money in your pocket!

7) Pay yourself first. This should have been up there with be real with yourself its that important. I know I sound so cliche when I say that but it is true. Can you handle a $3000 emergency right now if you had to? What about a $500 emergency without letting one of your bills go for a month? That's what I thought. Once you cut your bills you should see a surplus at the end of the month not a negative so take all that extra money and build a little into savings. Put it into savings and don't touch it, ever. It will give you the biggest sense of security and peace in your mind that you may actually get a good nights rest. I wish my hubby and I would have done this sooner as we would not have gotten ourselves into the pickles we did. I now have $1000 in my savings account which is my security blanket right now in case something happens. Eventually we will be increasing that but right now its just nice to have $1000 in the bank.

8) Start using more cash. Its so easy to swipe that plastic isn't it? Even if its a debit card, somehow in our minds it makes us feel better to swipe plastic. More powerful, like we have more money. But let me tell you something, doesn't it make you feel even better to use cash? It does me. Plus, its so easy to miss a transaction using your debit card. If you use cash, you can physically see how much money you really have and not to over spend it. What do you think people did before debit cards and ATM machines? They used cash. I have several envelopes I use for cash. I have one that I use for my gas money for the van, one for groceries, one for vacation, and one for that "rainy day" fund. The rest goes in the bank into our account so that we can pay our bills online instead of writing out checks and using stamps (which all costs money). On a little side note, I had one book of checks for almost 2 years because I pay all my bills online! And that one book of checks cost me less than $10. Not to mention the money saved on stamps. But back to the main topic. Did you know some banks charge you a fee just for hitting credit on the card machine? Well they do, sometimes up to $2.00 per transaction. Did you know when using the ATM at another bank not only will that bank charge you but chances are your bank is also charging you! Could be up to $5.00! Also, most identity theft happens when you use your debit card at a restaurant where the waiter takes your card with them. They now have the opportunity to write your number down as they swipe it to pay your bill. Scary, huh? What if you happen to overdraft? Oh boy, not only will you now owe what you overdraft by but also up to a $32.00 fee. This happens even if you over draw your account by a penny! So using your plastic can really cause you some damage! Using cash will cost you less in the end because its easier to keep track of. When you have something tangible in your hand, it makes all the difference. So think about that next time you want to swipe your card.

9) Implement your budget. Figure out your budget and then at the beginning of the new month implement it. Force yourself to go by the budget. At the end of that month see how much is left over. You might surprise yourself!

10) And finally, get your spouse on board. Finances is one of the top reasons for divorce in this country and part of it is people don't talk to each other! Talk to your spouse. Get them involved in the budget making. Let them know how much their coffee habit is costing you each month. Let them know how you managed to cut your bills. Make the plan together. This is probably one of the most vital things you can do to help with your monthly expenses. You can do everything right and still be living out of your means if your spouse isn't on board. They have to know what and why you are doing something. No more excuses, just do it. It'll be painful and hard at first but eventually it'll become second nature and it won't bother you a bit. Start packing a lunch for work instead of buying a lunch, walk to work if you are able, pay your insurance ahead of time. All these things add up over time and end up costing you thousands of dollars each and every year! Imagine what you could do with thousands of dollars!

What I actually do all day!

So the last two days you have read my morning routine and my evening so what do I do all day? Well that's what I'm going to focus on today. What do I do all day? I certainly don't sit around eating bon bons and watching soap operas even though that's the latest stigma of a stay at home mom. Actually, I'm lucky if I get to watch TV at all until the kids are in bed at night!

So after I get through my morning routine and I get my 10 minutes of peace I do a bunch of little things around the house. The first thing I grab is that basket I told you all about and walk around the house putting everything in its place. By time I'm done with that, the basket should be empty. If its not than either its trash that didn't get thrown away or its an item that needs to find a home or be re-evaluated for its need.

I'm truly a simple person at heart. The simpler things can be the happier I am. I try very hard not to make things difficult for me or my family. Now that's not to say that my kids are privileged and spoiled, so please don't misunderstand. I just believe in simplicity.

After I get the basket emptied, the clothes that are in the washer are probably ready to go into the dryer, so off I go to do that. All the while, my youngest son who is only 3 is watching his morning cartoons of Mickey, Handy Manny, Dinosaur Train, and a few others.

After I get the laundry switched over, I take a little time again for myself. This is the time I sit down at the computer with a cup of coffee and look through my emails, fiddle around on Facebook, do some blogging and maybe talk to a few people through chat. By the time that's all said and done with my coffee is gone, my son's shows are over, and the laundry needs removed.

I bring the laundry down and do a quick sort through for anything that needs hung up in fear of having to iron (I secretly loathe ironing) and leave the basket sit until later. I tidy up the breakfast bar, dust off the electronics, and play with my son. At 3:15 in the afternoon I have to go get my oldest. Then, my afternoon starts to round out because I have to now help with homework and make dinner. After that my evening routine begins.

That's the quickest run down about what I do during the day. Now some of that changes from day to day just depending on if my husband is home, if I have a sick child, how I'm feeling that day or if we have any appointments. I also catch a shower in there somewhere, the time just depends on many different factors.

So that's pretty much what I do all day long. So as you can see from this post and the last two posts, my day is pretty full. Tomorrow I will probably go into either room by room break downs or my financial organization. I haven't decided yet. :-)

Mom's Secret to a good morning- Set up a morning routine.

So yesterday I told you about making a nightly routine. Did you make one? How did it go? I bet it was a bit of a chaotic evening. It'll pass once you get used to it, just don't give up. It will pay off in the long run. I can definitely tell when I fall off the wagon for a few days. My house is in utter disorganization and chaos. So stick with it!

With that said, today I want to discuss exactly what I do in the morning since I do so much the evening before to help make my mornings more peaceful. Hopefully this is just as helpful to you!

1) Get dressed. I know this seems like a no brainer but seriously, get dressed. For those working moms out there you obviously have to get dressed to go to work so this one is mainly geared towards the stay at home moms. It would be so easy for us to get up and just stay in our PJ's, but how do you feel when you do that? How does your day go? I promise you if you get dressed first thing in the morning you'll feel more ready to tackle your day head on. Not to mention if that unexpected guest shows up at say 11:00 AM, you won't feel embarrassed about how you look. Not to mention going to the store in your PJ's is just lazy. Take pride in yourself even if its just jeans and a t-shirt. Bottom line, get dressed.

2) Take 5 minutes to put on some make-up. Don't have a lot of time in the AM, that's okay! Here is my 5 minute make-up routine. Put on some SPF tinted moisturizer and then some foundation. Before you put the face powder on, brush some blush on your cheeks. Not a lot just a little color. To set that in, put on your face powder, it gives you a little color and an airbrushed look. After that, put on some mascara. It'll brighten up your eyes without the 10 minutes of eye shadow and liner. To finish the look put on a light lip gloss or lipstick. I use a light pink that is slightly darker than my natural lip color but makes my lips glossy. And there ya go, you're ready to go and it only took you 5 minutes to do! I do this when my kids are eating breakfast.

3) This one may seem funny but brush your teeth. You'll feel ready for the day after brushing your teeth compared to if you don't. It takes 2 minutes to brush your teeth, do it and you'll feel better!

4) Once the kids eat breakfast make sure they take their bowls or plates to the kitchen and place them at least in the sink. This will save you time and steps when trying to clean up. My kids aren't quite old enough to load the dishwasher yet so I do that while they are brushing their teeth. By time they are done brushing their teeth my dishwasher is loaded and my sink is clean.

5) If you have a menu now is the time to pull that "something" for dinner. If you don't have a menu I suggest making one but if not at least think about something for dinner. It'll save you time and money come 4:00 in the afternoon and the kids are whining, "Moooooooom what's for dinner?" It'll save you money because since you already have something pulled you'll be more likely to go home and cook it since you can't refreeze meat after its been thawed out. I have had countless afternoons where my kids are whining whats for dinner and it would be so easy for me to just stop somewhere and order out, but knowing I have something already sitting out allows me to go home without stressing. Bottom line, pull something for dinner.

6) If you are a working mom, this one won't make any sense so ignore it if you like. For the stay at home moms- get a load of laundry ready to go in. I say get ready to go in so that after you drop the kids off at school or get them on the bus its all ready to go into the washer. This is the time that I do my laundry. I fold it in the evening as a relaxation for me but I actually do it in the morning. The only thing I put away immediately are the things I don't want to have to iron.

7) Make your bed. My day goes so much smoother when I take the 30 seconds to make my bed. Even if its a bad morning and for whatever reason its the only thing that I accomplished, it makes me feel better. I know some say, "but you're just going to sleep in it again so what's the point". The point is my sanity! I can go into my bedroom and it instantly looks better when the bed is made. Kind of like when you have a couple of dishes sitting on the counter, it makes your whole kitchen look like its a mess? Same concept. Plus, how can you ask your children to make their beds and you don't make yours? Kids learn by watching so when something you say or do doesn't make sense or contradicts yourself they are more likely to put up a fight over it. So make your bed!

8) Before you go anywhere and the kids are doing that last minute thing to get ready for school, do a quick tidy up of the living area. I have a laundry basket that I use to throw stuff into that I don't have time to formally put away right away. This helps with the later clean up plus it gives you a quick place to put something. Once you get home its all in one place, you can pick up the basket and walk around the house putting the stuff where it needs to go. My basket is generally pretty easy as it's usually filled with toys so I just have to go to one room.

9) Don't forget to grab something to eat for yourself along with your vitamins and your coffee! This is almost vital to a good morning. If nothing else, try to eat something, anything- even if just an apple. You won't feel so tired within an hour or so if you eat something. If you are working with a short amount of time buy some cereal bars that you can eat while waiting at the bus stop or while driving the kids to school. Your brain physically cannot function without some sort of glucose or fuel. So after an hour or so of being awake you start to wind down. You're body doesn't have anything to eat for 5 hours or more because you are sleeping so you are burning calories. Unfortunately, not eating breakfast will actually make you gain weight because your body will go into what they call "starvation" mode so anything you eat at that point will go straight to fat because your body is afraid it will have to go another long period of time without energy and fuel. During the day, 4-5 hours is ideal in between eating something. So aside from all the metabolism mumbo jumbo, eat something. Sometimes I grab something as simple as an apple.

10) Set aside 10 minutes in the morning to do anything. When I say anything I mean make this your time to just sit and drink a cup of coffee, read the newspaper, read or study some scripture- anything to ease the tension of the morning. These little 10 minute snaps of relaxation will make you a happier, healthier, calmer mom (or dad).

This is what my morning routine looks like. Do I do this every morning, no. I should, but lets face it, sometimes it doesn't always work out that way. Your alarm doesn't go off so you get up late, the kids wake up on the wrong side of the bed, you wake up on the wrong side of the bed, whatever it is not every morning will be cake. But I can promise you, if you put some of these things into practice it will make for an easier morning.

Mom's Secret to Peaceful Mornings!

So I've decided to do an ongoing piece on Mom's Secrets. A lot of people wonder how to get it all done and how. I get a lot of people who question how I personally do it. So here is the beginning to a series I hope will help everyone out called "Mom's Secrets". You'll find the whole series under the "Mom's Secrets" tab.

For part one, I'll start with my nightly routine. This is very important to keeping your sanity in the morning! What's great about a nightly routine is that this could apply to working moms as well as stay at home moms.

First of all, make a routine! I know that sounds funny but most people don't have a routine and then they feel frazzled and exhausted the next morning. Having an evening routine is just as important as your morning routine say before you get the kids off to school or as you are getting ready for work. And don't make it difficult, this is probably one of the easiest things you can do!

Here's a list of some of things I do every evening!
1. Load and unload the dishwasher. It's so easy to just load the dishwasher and then forget about it until the next day. I can't tell you how many times I've been lazy and didn't do this and what kind of morning I had. If you run it right after dinner and then unload it before you go to bed it will actually add minutes to your already busy morning. I always try to unload my dishwasher right before I go to bed so that I can put any of the leftover dishes from snack time in and go to bed with a clean sink. Plus, in the morning after the kids finish breakfast they can just put their dishes directly into the dishwasher- clean up done!

2. Fold the laundry. I know it sounds easy but I know everyone has a basket of laundry just sitting their waiting to be folded. My best advice for this one in the evening is to fold it while you are watching your favorite TV show. This is typically when I fold all mine.

3. Get the children to lay out clothes for the next day. This has been a life saver and a time saver during a busy morning in my home. Plus, it gives them plenty of time to realize if they don't have something or to take the time to pick something out. And while you're at it lay your own clothes out! You'll feel better in the morning if your clothes are all ready to go and all you have to do is get dressed.

4. Pack everyone's lunch. If you pre-pack everyone's lunch once again its less you have to do in the morning. If you are afraid of a sandwich getting soggy wrap the tomato in saran wrap. What I also do is if its PB and J, I will make the sandwich the night before and then freeze it. In the morning you can pull it out of the freezer and by time lunch rolls around it will be thawed out and ready to go.

5. Look at your breakfast menu for the morning. (Because I know all of you make weekly menus!) If you plan on making a custard or a breakfast casserole then you can plan and prepare the night before. Breakfast casseroles can be placed in a crock pot over night and then its done in the AM. If you plan on making scrambled eggs in the morning, scramble them the night before. Do whatever it is that would make your morning easier for breakfast.

6. Make sure your keys, library books, and papers to go back are all in one place. If you are anything like me you'll have keys in one place, papers in another and library books in yet another place. Gather all these things up the night before and put them in one spot. If its the children's library books tell them to make sure they are in their back packs. And make sure all papers and permission slips that need to be signed are signed and given back to the appropriate child. It is then their responsibility to get it to the teacher.

7. Watch the weather. I know sounds so easy and may be stupid, but there have been countless times in my house when we've put on light jackets with t-shirts and then step outside and its much colder than we expected. Watch the weather the night before and you'll better be able to say whether a child's outfit is appropriate or not.

8. Set the coffee maker. This is vital if you are coffee drinker like me! I hate when I have forgotten to set the coffee maker and I'm having a rough or busy morning. Then I don't get my coffee right away because I just don't have time to make it. If it's already set from the night before, all you have to do is turn it on. (I unplug mine at night to help save on energy)

9. Check your schedule or family calendar. Before I did this every evening there were many days when I would wake up and my whole morning would be crunched because I forgot about something that was going on that day or an appointment that we had. Check this the night before so that you have time to change your schedule or work around something you forgot about.

10. RELAX!! Always remember to relax. Take time to read or take a shower or do whatever it is to help you relax in the evening. If you stay high strung all day and into the evening you will have a hard time falling asleep.

So there you have it, my nightly routine. I always do all of these before I go to bed. And I don't mean that I do them like an hour before I go to bed I do them gradually through out the evening after supper. And don't be afraid to get your hubby to pitch in!

Secrets to Freezing Bread Dough

So as I realized today that I wanted to make a lot of bread dough to help prepare for the week ahead, I realized that its not really as easy as you would think. You can't just make the dough and stick it in the freezer to have for next time. So I will give you some of the secrets associated with freezing bread dough.

1. Always double the yeast in the recipe when you plan on freezing it. This helps for when you pull the dough out of the freezer for it to raise again before baking. The only exception to this rule is if you are making a bread roll instead of a loaf. If you plan on using the dough for a roll, use the amount of yeast from the recipe, no need to double.

2. Let the dough rise first, pound it down, roll the dough up so that it is no more than 2 inches thick and THEN prepare it to stick it in the freezer.

3. Before placing it in the freezer make sure you double wrap the dough. You could potentially do this any way you want but I will wrap mine in plastic wrap, then foil, then freezer paper. It gives it the best protection against freezer burn.

4. When thawing it out, place it in the greased bread pan you are going to use and let it sit for 3-4 hours. The dough should thaw and raise again to double. Once it raises, place it in the oven for the recommended amount of time and temperature per recipe used.

Lately, I admit I have been going over budget every week which is doing nothing for my overall budget, so this week I decided to make a menu for two weeks and then go shopping. I'm happy to report it worked out beautifully and I still have money leftover for next week's nit picking things like juice boxes and snacks for the kids. I'm only going to post one week here and save the other for next Monday but as always, the recipes showing a page number are from Taste of Home Comfort Food diet Cookbook.

How do you really measure ingredients?

How much is 1/4 oz of yeast? How do you measure a cup of flour? What about brown sugar? Do you actually know how to do these measurements? I sure didn't until I did some research when I was really starting to cook from scratch at home. My mother didn't teach me these things and I am a self taught cook. So in my journey's of cooking from scratch I've come across a few measurements that I didn't know and I thought maybe I would share them for all of you.

How much is a 1/4 oz package of active yeast? Well if you are anything like me, you buy your yeast in bulk. I buy my yeast at Sam's Club in bulk to save me from running to the store every time I need yeast. Plus, you can keep yeast in the fridge for a really long time! Anyway, 1/4 oz package of yeast is actually 2 1/2 teaspoons!

How do you measure a cup of flour? Well, it depends. It depends on whether it says sifted or unsifted. If it doesn't say than when you measure your flour you should ALWAYS sift it first. Sifted flour measures differently than non-sifted flour. Did you ever try to make bread and the recipe calls for a certain amount of flour and when you make it you can't figure out why it didn't turn out? Chances are, that's why. Also, a cup of flour is leveled off with a knife. A cup of flour does not mean a heaping cup of flour.

How do you measure brown sugar? Again, it depends. Brown sugar can be measured packed or unpacked. Packed brown sugar is more than non packed brown sugar. If the recipe says packed brown sugar, then make sure you actually press the brown sugar into whatever you are measuring it with. If the recipe doesn't say whether its packed or not, then don't pack it down. Just measure it as is, cup for cup.

How do you measure what's too hot for active yeast without a thermometer? This one is basic, if its too hot to touch, its too hot for the yeast. Now I know some people can tolerate hotter temps than others but if you know you have that tolerance than you also know when something is too hot to touch for someone else. I'll put it this way, if your child says its too hot, then its probably too hot. 105 degrees is all that's needed to keep yeast active, which is about lukewarm. If the water or milk/yeast mixture does not bubble once it sits for a few minutes then your yeast probably isn't active and you might want to retry before using it in your recipe. Yeast, when active releases a gas which is what causes the bubbles, but remember you have to feed the yeast to keep it going so make sure the recipe calls for sugar even if its only a teaspoon.

Well its another week so its another menu plan! Since its Monday and I'm just now planning my menu I don't have anything "planned" for breakfast or lunch today. Also, the places you see "choice" its probably because my husband is working and my oldest is in school so I allow my 3 year old to just pick what he wants for lunch. No sense in cooking a big lunch when its just me and my son. I don't have a whole lot of shopping to do for this week's menu since I went off what I already have in my freezer. That's the glorious thing about stock piling when stuff is cheap! The perfect hard boiled egg!

So I decided to post something on how to actually boil the perfect egg! I have a post on how to dye the eggs naturally here but I know a lot of people that don't actually know how to boil an egg properly to keep the yolk yellow and not green. Believe it or not it is very, very simple!

I usually use eggs that are about a week or so old just because once boiled they come out of the shell easier. Also, I use my eggs right out of the fridge no waiting for them to be room temperature. I place a pot of water on the stove and let it come to a rolling boil. Then I take a slotted spoon and place the eggs slowly into the boiling water so they don't crack. Once the whole dozen eggs are in the pot I set the timer for 11 minutes. Yes, 11 minutes. No longer, no shorter, 11 minutes. Once the timer goes off take the eggs out of the water immediately and let cool for about 5 minutes then you can place them under cold water to finish cooling. This method is for when you want to dye the eggs. If you are going to eat them right away you can place them in the cold water immediately. Reasoning for this is because if eggs are too hot and placed into cold water too fast they may crack, think of cold glass and hot temperatures! And there you have it, nice hard boiled eggs with a beautiful yellow yolk!!

Well, go here to see if there is a seed distribution center in your area where you can go for FREE seeds! This is by an organization called The Dinner Garden and if there is no distribution center near you, you can request them by mail. I've never done this so I don't know how long it would take to get them.

Walmart Coupon Policy

Here is the policy for coupons at Wal-mart. It has also been my experience that they will not accept internet game or toy coupons. Too many claims of fraud.

Walmart accepts the following types of coupons (see guidelines below):

Manufacturer coupons (Cents Off)
Free merchandise (or manufacturer's Buy-One-Get-One-Free) coupons
Store coupons
Pharmacy (Advertising and Promotional) coupons
Internet coupons
Soft drink container caps

The following are guidelines and limits:

Walmart only accepts coupons for merchandise we sell and only when presented at the time of purchase.
Coupons should have an expiration date and be presented within the valid dates. Walmart will not accept expired coupons.
Internet coupons should be legible and say "Manufacturer Coupon." There should be a valid remit address for the manufacturer and a scannable bar code.
Only one coupon per item is permitted.
Use of 40 or more coupons per transaction will require approval by Customer Service Manager.

Here is my Menu Monday plan. I will be gone most of tomorrow and also probably making pigs in a blanket so I probably won't get a lot of time to actually post tomorrow. So here it is, most of the recipes out of this plan are from my newest cookbook love Taste of Home Comfort Food diet. I absolutely love this cookbook and its really helping to keep me on track. So anyway, here's the plan for the week!

Monday: Breakfast: Cranberry Muffins with fruit
Lunch: Broccoli Chowder
Dinner: Pigs in a blanket, mashed potatoes, veggie
Snack: Apples with PB

Tuesday: Breakfast: Cream of Wheat (from samples I got in the mail)

Wednesday: Breakfast: Cold Cereal and fruit
Lunch: choice (meaning whatever my 3 year old feels like having!)

Dinner: Chicken Stuffing Bake
Snack: Chocolate Biscuit Puffs

Dyeing Easter Eggs

In lieu of Easter being right around the corner, I know I will be dyeing eggs soon. Actually, I need to pull 2 dozen eggs out of my freezer so they can thaw and I can boil them! Anyway, I thought you would be looking for ways to dye your eggs on the cheap or by more natural ways instead of commercial dyes. I will admit, I do sometimes use commercial dyes but only when they are free. Otherwise, I use the good ole food dye recipe. Overseas Coupon Program

Don't know what to do with all those expired coupons? Hate to just toss them? Help a military family overseas. They accept expired coupons up to two months expired. How awesome is that?! Go here to adopt a base and start sending. I have done this off and on for a while now and I'm hoping to make it a goal that I do this every month. Its recycling and it only costs a few stamps. Plus, you are helping out military families that are overseas where sometimes prices are extremely over inflated due to the shipping process needed to get the items to their commissary. I remember when I was living in Germany when my father was in the Air Force and just to buy coffee was twice the amount it was to get it here in the States and that was Maxwell House. Unfortunately, these families pays don't change just because they are shipped overseas so to adjust their budget for the over inflated pricing is really tough so to be able to use expired coupons is a HUGE help!!
